I notice there is a smooth side and a textured side. Does it matter which side faces up?

I prefer to have the textured side to the fabric, gives a bit more grip then the presser foot moves more freely on the smooth side.

Can you use this for stabilizing slippery material? My spandex will not move freely when coverstitching

No this is not the right product for what you want to do this is the keep stitches above the fabric so for what you want to do I will advise the invisible mesh in combination with a tear away both of these products are available on Amazon by superpunch thank you Johnny

Will this work well on cotton canvas?

I have used it on burlap, towels, fleece, and a few other plush fabrics. I usually just peel it off rather than wash it off. So yes I’m sure it would work on canvas. I used this on top of the burlap with another stabilizer on the back.
