I love that these are exceptionally fresh with 22 months till the best used by date! They are uniformly medium sized When roasting them to bring out extra fresh roasted flavors, I put these on a nonstick baking sheet, spray them with extra virgin olive oil, and sprinkle finally ground sea salt on them. I recomend roasting them at 295° for 30 minutes. They come out of the toaster oven tasting better than anything that you can buy pre-roasted. After cooling, I keep them in an airtight container. Don't roast more than you can use in about a week, because they will lose their freshly roasted complex flavor notes. I used to buy the lightly sea salted pre-roasted version, which tastes good, but they are made using poor quality, high in omega-6 oils. I try to avoid conventional highly processed, hexane extracted commodity oils whenever possible, especially when they are heated, and then reheated to high temperatures repeatedly, during high volume batch roasting, it causes their chemical structure to change in a undesirable way. Home roasting using a light application of EXTRA VIRGIN OLIVE OIL, adds a complex FLAVOR enhancement, and provides additional HEALTH BENEFITS simultaneously, The extra preparation work of Self roasting is well worth it, and it delivers freshly roasted EXTRA TASTY almonds every time! Just ordered my second 40oz bag! I've been eating a lot of whole natural almonds lately, as a healthy snack. These are good raw, or put in the oven for about 10-15 mins to make them nice and crunchy and add a great roasted flavor! Only reason for the four star review is the slight inconsistencies in the almonds per bag. I would say ~80%-85% of the almonds are great, but the remainder you will get some different sizes, some seem a little more fresh/crunchy than others, and slight taste differences. The different size is apparent when they are roasted. Ten minutes in the oven on a cookie sheet will get most of them a nice dark brown color, a small percentage will be under cooked, and a small amount darker than the others. I don't ever expect a natural product to be 100% perfect, but have ordered almonds elsewhere that were 3x the price, and much more consistent in taste/quality/size. That being said, I will definitely continue to buy these after I found them for this excellent value. You pay $13.00 for 2lbs 8oz of these, and the other higher dollar almonds range anywhere from $7-$10/lb. Overall, excellent value and I will continue to buy.
