Superb
This is without doubt the sharpest and most flexible filleting knife I have owned. Incredibly sharp - I’ve even used it for cutting the thinnest of wafers of cured ham and salami. Highly recommend

this was a present for my son-in-law, he and my daughter buy fresh fish every week shopping. We got them a set of Wuesthof knives a few xmases ago - that went down well, so we now got this knife and a fitting blade guard, Nick was well pleased and I think they will use this knife every week to prepare the fish they buy

These knives are expensive but well worth it. Everyone who uses our set absolutely loves them. They are well balanced and sharp; the chef's (cook's) knives have a nice heft. Because I consider these more of a lifetime investment than a kitchen utensil, I am fanatical about treating them with kid gloves (never put away dirty or wet and never use the dishwasher), so I cannot attest to their durability. I purchased the Wusthof three stage electric sharpener for them but have not yet had to use it--all of the knives are still razor sharp with regular use.

調理人は魚をおろすのに使うがパティシエは刃の薄さやしなりを利用してフルーツを薄くスライスしたり柔らかい果肉を切るのに使う。レモンとか皮が硬いフルーツをスライスするのには向かないようなので、その場合は同じサイズのスライサーとか刃が少し硬めのものを使うとよいです。

wow does this thing hold an edge. I have had a lot of fillet knives and made the decision to buy this one after we got wushof steak knives for our wedding and how impressed I was with them. I have now retired several other fillet knives in favor of this one, including a buck knife.
