When I use it, Apple liquid always splashes on me, is there a way to avoid that?

never had that problem. Never had apples that juicy. Peaches yes, apples no.

what size is the hole for the core?

Approx. 1.0" Mine is not a perfect circular hole for the core. But it works.

Does this cut through potatoes?

I use it for apples with no problem although you have to press down hard. The blades really could be sharper. I suppose it will cut a potatoe since both apples and potatoes have about the same hardness
