There don't seem to be any real ingredients. Just a bunch of chemicals?

It is a processed food....what were you expecting? Without looking, I do believe that much is dehydrated diary product with thickeners added and preservatives. They have not added sugar which is the most important thing.

What is the used by date like?

Bought mine ages ago, probably over a year. Has very long use by date. Was a couple of years.
