Sharp out of the box, multifunctional and a bit of a wow factor
I work as a chef in a busy restaurant, and wanted something to bridge the gap between my go to knives, my 210 gyuto and 165 nakiri. I've been shopping around, looking for something that has a good steel, but different from your standard generic knives you see on every rack everywhere you go (not that I will have this anywhere near a rack in work). I came across the Dalstrong Delta Wolf series and immediately thought "take my money". Even for the aesthetics alone. But boy does it perform. I've only used it for a day or 2 in the kitchen, but I've been able to use this one knife predominantly. Everything from butterflying chicken, rock chopping herbs and soft produce, push cutting and quickly prepping onions, carrots etc with the vertical chop. The blade profile enables this to be more or less the one knife to rule them all 😅😆 there are times of course when you will need a longer blade for carving etc, or a smaller paring knife. But for the majority of tasks, this is the knife you can pick up and go to work with. It certainly has a 'wow' factor about it also. I unsheathed it when I got into work for my morning prep, and the other chefs in the kitchen all appreciated the look of the knife so much that 1 or 2 of them are looking to invest in knives of this series themselves. I'll see how the edge holds up with a couple of weeks of continuous use, but for now I've found my new go to knife for the majority of tasks in the kitchen. Highly recommend if you're looking for a multifunctional, sharp and stunning blade.

INCREDIBLE
This is my 3rd dalstrong and by far my most favourite the handle is so comfortable great for slicing dicing every kitchen need so happy with my purchase contemplating adding to my collection

UPDATE: *** Adding ⭐⭐⭐⭐'s, bringing the total to 5, following the outstanding lengths the Dalstrong Company went through to ensure I was a satisfied customer. Nancy - the Customer Service Communications Director, reached out to me and offered a new knife to replace the one that broke due to my clumsiness. I was not asked to send any money in return, nor was I directed to upgrade my review in exchange for the new knife. The replacement arrived yesterday, and out of the box, the new one looks better than the original when it arrived. The first knife I received had a smudge of something (maybe from the packaging process?) near the edge of the blade at the handle. This smudge only became more noticeable after I washed and dried the knife a few times. It in no way affected the performance of the knife as I used it. Honestly, I believe the extreme sharpness of the blade - coupled with the lightweight feel of the knife - made me a bit nervous, which led to my dropping it and severing the tip. I should have taken more time to accustom myself to the feel of the knife. This morning, I used the replacement knife to prep ingredients for my smoothie. It easily penetrated the pit & the peel of a chilled, not fully ripened mango - as well as kale- and, of course cucumber (Still amazed at how effortlessly the Dalstrong Delta Wolf Series Santoku knife goes through cucumbers!). End Of UPDATE *** After washing and drying the knife for the first time, I used it to make the cleanest & easiest two slices through a cucumber I've ever experienced. It was pure Bliss - like I was aiming a laser - expelling no effort of my own... Then, the knife slipped from my hand, making impact with a cast iron skillet on the shelf below - immediately severing a good portion off the tip of the blade. Beautiful knife. Comfortable. Ergonomic. Perhaps a bit Too light weight & fragile. First time I've ever witnessed the tip of a knife break the first time it was dropped. So sad.

Be Careful.. This knife is seriously sharp. This santoku is perfect for slicing, dicing, and mincing! Lighter than your average santoku, this knife has a much thinner blade which is perfect for more refined and delicate slicing. The blade is made from 9CR18MOV which is great because it has a very nice edge retention (don't have to sharpen as often) and it has high corrosion resistance (low maintenance). I use it this knife for vegetable prep in our commercial kitchen. Everything from lettuce, tomatoes, onions, mushrooms, peppers, garlic, and delicate herb prep. The granton edge (small divots just above the blade) reduce the friction when slicing and impressively reduces the amount of food that sticks to the blade. As far as balance goes, I want to mention that there's no "perfectly balanced knife". Each person has their own balance point based off of what knife they are using, how they use it, and especially how they hold it. This really applies more to chef's and professional cooks who tend to use knives for many hours at a time doing the same type of cutting. For home cooks balance is much less of an issue. With that being said this knife is balance between the bolster and the first rivet (almost exactly like my wustoff). This means that if you hold your knife with a pinch grip or a thumb grip you will find this knife very comfortable in the hand Overall, I feel that this is a nice knife, not only does it look good but it's very functional for my needs. I wasn't sure I was going to like the thinness of the blade but after some time using it I have really come to appreciate the "scalpel" like quality that this knife has to offer. Cool addition to my collection.

Great knife for veggies or fruit retains sharpness well way to clean

This may be the best chef's knife I've ever used. Not only is it beautiful but it's so sharp that just the weight slices with ease. I only have two issues. One is that it looks a little military but that's no biggie. The other issue is that the handle, although shaped perfectly, is a little too large for my hand. But the more I use it, it's feeling more natural and balanced and my cuts are more consistent.

i work in a kitchen, this knife is great for everything i do, durable and sharp blade, lightweight and easy to keep clean. the sheath it comes with matches everything and it’s honestly pretty nice. dalstrong is a very reliable brand and i recommend this knife to anyone
