No issues using phantom power. Make sure to use properly shielded cable with them to properly utilize phantom power.

Can I make my own cat 6 cables?

Yes, just make sure you are using shielded cable and connectors. The PIN 1 "ground" is carried over the shield on the CAT cable.

Can you pair this with other brand or do you need same brand in between the Ethercon cables?

Yes you can pair it with other brands. Did an install last week and was able to test it with another brand.
