Why does it smell like plastic burning when in use? Anyone else have this problem?

How new is the cook top? New product will sometimes smell due to the heat and insulation & plastic in the unit It is normal and should go away with continued use.

Is the induction cooker suitable for any pot?

If a magnet sticks to the bottom of the pot it will work with induction.

Can you resess this into a counter top

You can placed when ever you like. But, I would not recommend because it needs space to ventilate the heat from the coils.
