Very interested in this but can others monitor your web activity / emails with this?

This is not how the internet works. Unless you host your own email server off of your own computer, your emails are already on the internet, accessed via a portal (either a web browser or an on-device email client). Because of that, if someone hacked into your email provider, they could, technically, read your emails. If you want security from outside eyes looking on your computer and inside your network, then setting up your router and APs properly is key to prevent someone from prying eyes from getting in. But, even more importantly, ensuring your computer is secure (has a password that is actually good, you're using 2FA for all your accounts where possible, and you're keeping your computer up to date with security fixes) and using privacy-safe browsers (read: not Chrome) for your web browsing will keep eyes off your activity. All that said, unless you have a reason to be worried about prying eyes, or you're doing things like emailing SSNs and credit card numbers (which you shouldn't EVER do), the worst thing someone would do with your web activity and your emails is sign you up for mailing lists, ads, and spam.
