The easy grip handle should be entered into the produce AFTER the skewer is in place.

What is the width of the blades??

The width of the blades doesn't matter. The thing stinks. You can only cut stiff, flat veggies. It's very hard to use and none functioning.

What should I do with the left over produce?

We recommend loading it on the Vasta or saving the scraps for other creations like salads!

How do you get it to turn the zucchini.? The handle just shreds up the inside and I have to try to hand turn it which is scary?

It did not work well for me either. I got a couple good turns (I used yellow squash) and by the 3rd turn, the insides turned to mush. I saw a review where someone peeled the zucchini and just left peel on the ends and had better luck with the device, I'm going to try that.
