Great Spice
Great fresh spice that I use in my salami making. A great aroma and taste. Great price in this size too!

I USE THIS WHEN FRESH TARRAGON IS OUT OF SEASON (IN MY GARDEN).
I use fresh tarragon in a lot of dishes. It is great in lobster salad and deviled eggs. Excellent in homemade mushroom soup, too. But I can't grow it year-round and the stuff in the grocery store is expensive and often lacks flavor. Dried tarragon tastes like dust, so I thought about what makes fresh tarragon taste so good. It's the licorice flavor. (I'm not a fan of licorice, but tarragon and fennel add flavor that really contributes to dishes like the eggs.) Since fennel is also licorice-y, I decided to give this a shot. It's not as strongly flavored as I would have liked. In other words, I have to use more of it to get the impact. Still, it takes very little to add the mysterious flavor that people ask about when they eat--and love--my deviled eggs. Basically, it would be good in any dish where you'd use fresh tarragon or fennel. (Fresh fennel is available year-round in my area but it is really expensive and you have to buy a whole bulb, which is more than I'd use for most dishes.) I have not tried other brands, so I can't attest to their quality. As with most of my herbs and spices, I keep small amounts in mini-Mason jars and keep the rest in the freezer, where they last a long, long time. Try a small container of this stuff to see if you like it. There's also dill pollen, also not as much oomph as the fresh stuff, but better than dried dill weed.

fantastic!
This is now my favorite herb/spice, the aroma is amazing, the flavor is amazing, so far I've used it on pork chops and sprinkled some on top of pasta bolognese I made from scratch, it adds such a wonderful special touch, I can't wait to use it on more dishes. It's not cheap but it's also not easy to harvest (I've done it before, tedious) and once put into a tight container it should keep for a good while. If you like fennel and fennel seeds, give this a try, you won't be disappointed!

Amazing pungent fennel!
I am awed by the amazingly pungent flavor and smell of this fennel pollen. I purchased it to make an authentic porchetta and it did not disappoint! In fact, I used way too much on my first try because I had no idea how much flavor is packed into each little bit. I think it's a great value for money for this reason. You only need a little bit to pack a fennel-punch.. I store it in between uses in a vacuum sealed bag.

lower price, lower quality
This Fennel Pollen is much lower price than others per lb, but it includes a lot of pieces of flower, and its a little less flavorful. The mouthfeel is distracted by the stiff pieces of flower, and sometimes they get stuck in my teeth. The flavor is less delicate than other brands, less floral and more like ground fennel. At basically $100/lb, i wish I had saved my money and bought the more expensive, higher quality but smaller container from another brand that is a little more pollen and less stem. Its still a good flavor, but not a delicate high end finishing spice that shows well in a presentation. The advantage is you don't feel like you need to use it sparingly because 8oz is a lot.

Delicious and easy to use

the MAGIC pinch
there is good fennel pollen and there is really bad dried out fennel pollen, this is GREAT fennel pollen. Though seems expensive you need just a pinch to make a dish special. It is the magic spice all over the Middle East...and I use it in chicken, eggs, salad and even on take-out pizza (extravagant perhaps, but really only a pinch and...the difference is amazing). Even if you HATE fennel...try this, the taste is not so pronounced and it adds a "roasted" note..not smoke, but "roasted" The real magic is in making a salt, fennel pollen and other spices that we leave on the table... some people have a signature cocktail, some have signature coffee and some a special dessert, we have a house blend salt.. and I get raves at gifting time for giving it away....only I never tell what the magic spice is (till now...I guess...um....forget everything you just read...)

Fennel Pollen
Bought a pound when I was I Italy. I finally ran out, so tried this brand from Italy. Excellent! Good on chicken, pork, fish, steak and roasted potato' s. ❤️ it!!
