An excellent 10" performer!
I have been using this knife in the professional kitchen for a while now. The review is about my experience and pure performance of this knife. I've been using German and Japanese knives and they are excellent in their own respects; however, in the busy professional kitchen with a lot of staff using $$$ knife is not the best idea.Size:if you are a home cook and just starting to develop the knife skills, this knife might be a bit intimidating because of the 10" size. With confidence the knife will get smaller in the eyes of a user.In professional kitchen 10" is a must, it saves time, and space wise it is not a problem at all. Wherever I work at the prep table or on the line station with limited space I was comfortable using it without adjusting my arm.Handle:No matter at home or in pro kitchen, a good handle is a must. And that was one of the things that got me sold with this knife. The handle is made of rubber and the shape is very comfortable. If you ever cut greasy food, you will love this handle. No slipping while working, or danger of picking up the knife quickly and dropping it on the floor cause its slippery. I use the pinch grip often, but am happy to have a good handle if I need to cut trough tough produce or meat.Weight:It's very very light knife which is a plus in my book, people that say weight helps you with prep. did not use a knife during the whole shift obviously.Blade:Sharpness out of the box is more than enough, since this knife is not for my hobby I do not care about shaving the hair of my arm. After month and a half of using it 5 days a week, 2-3 light swipes on the honing steel before prep and its sharp enough to fillet a case of tomato effortlessly. The food is sticking quite a bit, but that is a trade off I'm more than willing to accept with all the other good sides of this knife.Maintenance:It say it's a high carbon, but don't worry it will not react at all. In busy service it's pretty hard to wipe the knife all the time, and there is no discoloration, patina or rust at all. Seems like stainless steel to me, but I'm no expert on tech. specs. so high carbon it is :)To conclude, this is an excellent knife for pro kitchen. For the low price it will give you a very good bang for the buck. For home cooks, it's not a drawer queen but performer, use this and display a J knife lol.

Excellent Knife for the Money
While I have a number of more expensive chef's knives, this is an excellent knife and has become the one I use most often. It is easy to sharpen, well balanced, and comfortable to hold. Highly recommended.

Nice knife.....for price
From a chef point of view....When i first received this knife i was very skeptical, and disappointed due to the horrible condition in wich it came. The blade had chips and knicks all through out the edge. Very sorry sight to see. With a few swipes on a steel the edge was corrected And is now my "go to" knife for 12 hours a day, the edge is very easy to maintainKeep a steel handy and use often, the handle stained orange some after cutting carrots for me not a issue at all. Wish there was a little more weight to it, again not such a big deal.But what made me give 3 star's is the shape i got it in, staining of the handle and the blade has a little to much flexOther wise i love it for the price range i got it for and would recommend

This is a great knife. I have top of the line expensive knives and it holds up with all of them. I have wusthof diamond sharpening steel that I carry in my knife bag and this knife takes a great edge and holds it through the day. The best thing is when cutting greasy meats the handle is a dream and keeps a great grip, unlike my other much more expensive knives. It is also is light which is nice for all day use. Can't recommend it enough and will buy one for my home!

Terrific value for the price.
Sharp very sharp and easy to keep that edge. The knife is comfortable to use. I find the handle to be non slip. So far there has been no discoloration on the blade a trait of carbon steel knives. Fantastic and razor sharp. I would buy it again!
This is my first Dexter- Russell knife and I'm glad I bought it.It is extremely sharp and retains its sharpness.The handle is very comfortable and allows perfect control.It is a 10' blade which I knew when buying it and although it looks large, it doesn't feel so when using itIt is nicely balanced and light, which make it perfect for most jobs in the kitchen

Great quality and excellent handle
I own expensive German, Swiss and Japanese knives. This knife is my go to for everything now! razor sharp and hold it's edge very well. Great quality and excellent handle. My favorite knife.
