Straight forward and easy to understand
I purchased this for my homeschooled, high school student, who wanted to do candy making as an elective. This book is well laid out and does work for this. It begins with several sections covering the tools required, ingredient information, basics of sugar cooking, and several facts about chocolate melting. Then, it is divided into chapters, which center around the various types of candies (sugar, caramels, fondant, chocolate, marshmallow, etc). At the end, not only is there the normal glossary but also some decorative ideas and tips. All of these recipes are easy to follow and do create lovely treats. On the homeschooling end, of course, this book only served well for the actual cooking and other information (history, chemistry, etc) needed to be added in addition (but this is a cookbook not a textbook). Also, I visited the chapters in a slightly different order, since the recipes in the early chapters sometimes did call for chocolate dipping, although chocolate hadn't been visited yet. And lastly, this recipe book calls for microwave chocolate melting...which we did, instead, stick with the traditional, double-boiler technique.Summed up, this is great for candy making beginners and covers quite a few fronts.
