How much space should there be between the screws/buttons?

It's personal preference. Just do the spacing equal so it looks nice. Can be 1 inch can be 6 inches, whatever holds the fabric up properly

Will this product work for my 2001 Jetta headliner? - looks like these screw in so my question is will this work specifically on my car's make/model?

Yes I think it might. They hold well and you can arrange them to hold up a sagging area that is dropping, especially if the sagging is near the center of the headliner..If the headliner edge is coming down they may not be as effective.
