They can be stored in your pantry. They don’t have to be refrigerated. They have a fairly long shelf life. I have always used them up within 6 months but I feel they can stay longer. Btw, the ones from this brand were not great. You can get fresh ones from in any India store. Leave then one your counter and they will dry in 2-3 days.

Q: how much curry leaf powder to use instead of fresh leaf?

Not sure I have a specific measurement. The dry leaves in the jar are quite intense so I would start out with a small amount and add more to taste. It’s impossible for me to get fresh leaves so this is a great alternative.
