Q: Can it fit two 1 inch binders, one 1 1/2 inch binder, multiple notebooks, and with my (quite large) pencil case?

It is the size of a regular backpack. It will fit multiple 1" binders and a laptop.

Q: Can it fit a laptop and a few textbooks?

Yes. However this backpack is a bad investment. The zippers break. And the clips don’t stay on well. If you choose to take a chance don’t use it for school. Won’t last a month. Use it as a weekend bag with light weight items.

Q: Is there a area on the side to put your water bottle? Or any spot to put one?

If your water bottle is small enough, otherwise it only can be put in the bag.

Q: Will it fit a 5 notebooks 3 book a (Chrom.) book and a big folder?

It will, however my daughter has had it since the beginning of school and I have had to repair it several times due to it tearing from the weight of books and Dell computer (She's in 7th grade) I wouldn't buy this again for school, but its cute for a casual backpack. She wants to keep on using it, so I will keep on stitching it up.
