Amazing. It tastes just like the real thing.
So, my first set of pancakes were a disaster. I followed the instructions, but it says to make a "pourable" batter and I needed about 3 times the water to get to that point and it made nothing but a mess.BUT I decided to make biscuits afterward and they were EXACTLY like real bisquik biscuits! So good!Then today I decided to retry the pancakes. I followed the instructions again, paying closer attention to the "do not overmix" (which was another thing I did the previous day to get rid of lumps.) and I adjusted the recipe to my liking. Here's my new revised recommendation: (This makes half of what the original recipe on the package says, because there's only two of us and we don't eat more than 4 pancakes. This makes about four 6 inch pancakes)Do not add melted butter like the recipe on the bag calls for. Although it makes DELICIOUS pancakes they are damn near impossible to make/flip. I believe that adding this butter makes the pancakes extremely fragile and instead of picking them up with your spatula, you'll horribly mangle every pancake, trying to flip it. I do not know what purpose the butter is supposed to bring to the recipe, except perhaps boosting the keto fat, but the carbquik mix already has shortening chunks mixed in. It does not need the butter.ONE cup of carbquick. (Not two)1 whole egg1/8 cup of heavy cream3/4 cup of waterMix in a bowl with a fork until the batter is recognizable as pancake batter. Try to get the lumps out within 30 seconds but don't worry about it after that. Just make sure it's mixed together.Pour out onto a griddle as normal.I tried the pizza crust and it was pretty delicious. Although it was slightly bready compared to my kind of crust, it really worked well as a low-carb replacement. (another edit: I tried the pizza crust again and made sure to roll it very thin with a rolling pin and baked it slightly before putting the toppings on and it was good!)This product is going to really help me stick to the low-carb diet!

Expensive, but worth it
I am not the sort of person who says a low-carb substitute tastes good just because I can't have the "real thing". If it doesn't taste good, I'll say as much.This pancake mix produced the best pancakes I have ever eaten.They're light and fluffy, buttery, and taste... well, like really good pancakes.Tried this mix out for making biscuits too, and they turned out great.It's not without downsides, though - the big one is the cost. No dancing around it, this is 2-3 times the price of Bisquick. However, if you want a low-carb alternative to traditional pancakes, this is still going to be your best bet.There are a few other caveats worth pointing out. If you want pancakes, you need to mix in eggs, giving this an extra step in the process over Bisquick. Also, while mixing, you may notice little hard bits in among the mix. I was really worried about this (they seem really hard!), but I suspect it's just hardened palm oil, and it melts in with the rest of the mix when cooking - the final product doesn't show any sign of this stuff.Oh, one other thing - the packaging this comes in is trash. The Ziploc-style sealer at the top doesn't work properly, and keeps popping open. I ended up having to repackage the mix in a normal Ziploc bag (though I keep it in the Carbquik packaging in case I need to refer to any of the recipes).In short, if you're on a keto diet and craving pancakes, this is absolutely what you want! It's not without some quirks and frustrations, but for what it is, it seems like damn near a miracle.

This stuff is a game changer
This mix is a life saver for anybody doing the keto diet, seriously. I say this with complete honesty, I could not do keto without this stuff. Yes, it is expensive but it is also the only thing out there that actually tastes great and can do what it does and I am on my 3rd bag because of it.I make biscuits with this mix and have sausage gravy and biscuits for breakfast and it actually tastes like regular buscuits: light and fluffy texture and good flavor. It is also very easy to use. Just this mix with one or two other ingredients and BAM, amazing baked goods that are low carb and taste like their regular, full carb counterparts.I've also used this mix to make scones, waffles and pizza crust. The pizza crust wasn't great, we ate it of course, but the texture wasn't as good for pizza crust as fathead dough. The waffles, scones and everything else has been absolutely incredible though. I think it would be great for anything that you would normally use bisquick for and I will continue to test that theory. There are also several blogs with recipes using this in addition to the carb quick website recipes.

Don't just follow the recipes!!
Ok, I am a bread/pasta gal. But I went keto 4 months ago and it has been HARD. I was really excited to try this. I don't like a lot of keto substitutes. I made my favorite biscuits and gravy the first night. The biscuits made me sad. They looked like the real thing but flavor was awful. I made pizza crust, again using the recipe on the bag, and it was...meh. So I added some salt and garlic powder to the next crust. It was a little better but texture was still off. So I've found adding olive oil, salt, garlic powder and a little grated parmesan gives the crust a really good flavor and improved texture. I'm getting more to see if I can make yeast dough with it and to retry the biscuits with some flavor tweaks...I definitely recommend this stuff but play with the flavor. Its pretty awful standalone.
