Sturdy and very sharp! Perfect for Large Salmon!
The knife fits great in my hand and has the backbone to push through large Salmon but has flex also! I am a not a pro at cleaning fish but saw a pro using this knife and was amazed at how it performed!

Stay sharp and is a very tough knife.
I love this knife. We very often do not need the flexible flexible blade found in most fillet knives. This blade is definitely stiff compared to those lightweight fillet knives. Unfortunately I was only able to clean a few dozen fish before I accidentally dumped the knife into my canal and was never able to recover it. That’s good news for Dexter as I had to re-order another one. It is easy to sharpen and it stays sharpened for a long time which is a weird combination, but true.

USA Company Since the 1880's
Came in a box 2'x2'x2'...that must be that no one gets hurt in the shipping and delivery of this finally honed blade. As soon as I got it I did the paper test...it sliced a strip easily. Nice handle for utilitarian purposes not for a beauty contest. Made in the USA. A fair price for a wonderful brand name that has been extant since the 1800's.

Great feel and blade
Did not come sharp and I quickly became irritated with it. Finally sharpened it and it became a whole new knife. Holds edge well and ergonomics are great. I use it for filleting crappie as well as trimming briskets and game quarters. Not flexible enough to easily slide between fish meat and skin, but works great for cutting through the bones.

Sharp, Holds an Edge and Very Versatile
Came laser sharp right out of the box and holds an edge very well. Has been making quick work out of stripers and big drum fish, but is still flexible enough to run through flounder and seabass. Made in America and better than those ridiculously priced 'red-handle' knives that are mass produced in China. Highly recommend.

Best fillet knife ever!
This is the best fillet knife I've ever owned! I used to work on a trawler in the Bering Sea. This knife is as good as or better than the ones issued to us while on board! Good grip and keeps an edge. Excellent for working with larger species like Steelhead or Salmon! My one complaint is I wish it came in a sheath. But still gets 5 stars!

NOT U.S.A. made
All Sani-safe knives I own are U.S.A. made. This knife and handle are not even marked with country of origin. Hrmmm. Smells like chemicals, so doubtful I have a foid-grade nylon handle like the real NSF rated Sani-safe products of the past. Luckily, this cheap, if questionable food-grade knife is only for trimming burger/sausage meat. Didn't need a $50 knife for that 2-3 times monthly useage rate.
