What is the resistance range of the 1k?

Not sure exactly what you mean. This is a 2 Watt linear taper potentiometer. It has a range of approximately 0 to 1000 (1K) ohms. If you clarify your question, further, I would be willing to explain.

What is the Pinout for the 10k pots? 1 2 3 = ???

As viewed from the front, looking down the shaft, the lugs at the bottom, shaft fully rotated anti-clockwise, the lug on the left, is 0 ohms, the middle lug is the wiper and will vary its resistance linearly according to its position and the lug on the far right is 10k. These are measured from pin 2, the middle lug or wiper to the corresponding lugs 1 and 3. I hope this helps you understand how a potentiometer works. You may at your discretion re-arrange the pin outs to however you need them to be named to suit your layout remembering that the two outer lugs will read the resistance that is labeled on the potentiometer and that the middle lug will read differently according to the shafts positioning. Also when measuring from the middle lug to either of the outer lugs, their sum will equal the total resistance of the stated value of the potentiometer.
