Q: what is the expiration date?

If you put the yeast in sealed containers and freeze it, it extends the expiration date by 10 years. Just be sure that you use water as hot as it comes out of the tap to activate it.

Q: Why price gouge at $55 / $60 when the regular cost is $10?

This is sold by Red Star and is $29 so I don’t think they’re price gouging. A 4oz jar is $5.99 at the grocery store. This is a 2lbs bag.

Q: Does this product contain Sorbitan Monostearate, or is it just the yeast?

I was concerned about that question too. My shipment arrived yesterday and it's just the yeast.
