The thing I think you are calling a knob is the brake light switch or can be hooked up as starter safety switch(You have to apply brake to start). The two gold bolts out the rear that hook to brake pedal can be adjusted so you have more front or rear braking if you want.

Q: What is correct brake fluid?

While DOT 3 can be used, most utility off road vehicles recommend DOT 4 brake fluid.
