I have used cans of Ro-Tel diced tomatoes, lime juice for making guacamole mixing cumin, salt, garlic, and cilantro together! Delicious with Santinas tortilla chips!

I stopped buying Rotel
I stopped buying Rotel because recently the cans are full of black specks from the green chilies being fire roasted and tomato skins. The product is not clean. I am not using diced tomatoes and Mexican seasonings. Works just as well. Not sure what to do about the Ortega green chilies yet :-(

Sometimes I think Ro-Tel should carry a warning label warning us that it's so delicious it could be addictive. I use it so often I don't really think about it. Making bean salad, add a can of Ro-Tel. Making a casserole, add a can of Ro-Tel. Making salsa, Ro-Tel is the base.I made a fairly ordinary macaroni and cheese dish except I added Ro-Tel. A friend raved about it. I almost felt like a cheater since all it took was a can of Ro-Tel.
