Q: do i need to have a thermometer as well in order to use the isomalt?

Definitely recommended as you need to get the sugar to crazy temperatures that you wouldn’t necessarily know it’s hit. You can pick up relatively cheap ones in the supermarket.

Q: how do you make this brand as there's no instructions, do you just melt or add water

Add a little drop of water bring up to boiling point. (For soft sweets) for hard sweets you need to boil for approx 5 mins hard cracking point put in your moulds ect let cool and will be rock hard and lovley and clear xx or can add a drop of food colouring for different shades

Q: Is it halal ? Is it suitable for vegetarians, does it have any alcohol in it ?

Sorry I have no idea, I make marmalade and I just use cane white sugar with Seville oranges and lemons and it sets without a problem.
