Q: Is this a good choice to seal cracks in my concrete pool deck?

This product would work well to seal crack in the concrete around your pool.

Q: What color is it when sealed? can I use it to seal the seams on horse stall mats on an RV?

The Vulkem will not bond to those mats, I would recommend Chemlink M1 Structural Sealant / Adhesive instead for this application https://www.amazon.com/dp/B0711557XW/

Q: Is this good enough to use as a construction adhesive? I will also be screwing the Hardietrim down, but want an extra grab on the over lap!

For Hardie Trim I would recommend the Chemlink M-1 Adhesive, it has 465psi pull strength which is almost double the grip strength of Vulkem
