Q: Would it be ok to spray some waterproofing spray on it to make these a bit more resistant? Pros and cons of doing that?

I believe you can spray waterproofing on any shoe. I don't think it would stop water from coming in the nylon mesh.

Q: If I wear an 11 in other Salomon shoes will I need to order a half size larger in these?

I wear a 9 1/2 in just about everything. I ordered a 9 1/2 and they fit perfectly. They run true to size in my opinion

Q: Does this come in a hiking boot version?

The Xa forces mid are the tactical boot version
