Which side is easiest to break the composite? Bumpy side up/down or doesn't matter?

Didn't really seem to matter, really nice product.

Are these strong enough to level a hot tub/spa?

I used mine to level a large outdoor deck (2x6's and deck boards, etc). The whole deck must weigh 2,000 pounds... No issues .

can you staple thru these for hardwood floor installation?

Hello! The shims can be nailed, stapled, etc. We do recommend a staple or nail with as small of a diameter as necessary to facilitate successfully securing the flooring. If the diameter of the staples/nail is too big, then it may cause the shim to crack. We hope this helps!

What angle are these? 3, 5, 7, degree?

not sure of the actual angle, but they seem to be the same as the wood ones you get at Lowes and Home Depot
