What are the interior dimensions of the pan?  I need it for a long leg of lamb, but cant find the pan dimensions to know if the leg will fit

It’s a pain that companies don’t include inner dimensions, but it’s nice you can ask her. So, here’s the inner dimensions for the 28qt size. 17.25 in. wide X 11.625 in. deep (front to back) X 6.75 in. high. Add an additional 3.5 in. for lid.  Again that’s 17.25 X 11.625 X 10.25 with lid.

Whats the difference in this and a crockpot

First about Crock Pot temperature: According to the FAQ on the Crock Pot company web site, the high and low settings are set for the same temperature. The difference is how quickly they get to that temperature. The roaster's operating temperature is set by the user. A slow cooker draws 70 - 250 watts. The roaster draws ca. 1440 watts. A slow cooker uses a ceramic insert (a crock) which has a relatively high thermal mass to help keep the temperature constant - slow to heat up and slow to cool down. The roaster uses a less dense steel insert. The roaster can get much hotter than the slow cooker. Slow cookers seldom need to get above 212F since water normally boils at that temperature; and, water under normal pressure cannot exceed 212F, the slow cooker's temperature is limited. Since many slow cooker recipes call for simmering in a water based liquid as a cooking medium the temperature is limited to the boiling temperature of the liquid. Roasting by definition is a dry process and physically does not limit the cooking temperature. If the roaster does not overshoot or undershoot the temperature setting too much, it could be used as a slow cooker. If the temperature is not stable enough the results may not be as expected.

How long would you cook at 20-28 pound turkey and at what temperature?

I have never cooked a turkey this big in my roaster. I have roasted 16-18lb turkeys .I would follow the same instruction for conventional oven roasting. If there are no instructions with your turkey, google the weight and look for conventional oven instructions and follow them.
