Will this fit in a backpack water bottle holder?

Yes, it fits in my car cup holder as well.

What material is used for the straw? Is it plastic or something else?

It's a stiff type of plastic. It's not flexible like a drinking straw you'd get from a fast food place. It's a stronger food grade pvc type.

How tall is the bottle without the lid?

Measure the bottle. It is 8-3/16 inches tall.

carbonated water: will it bubble up and out of the bite valve if I have CO2-infused water like my old favorite Camelbak straw water bottle??

Yes, unfortunately, it will not work with your water of choice It will bubble up and out of the bite valve with a carbonated water.
