Would this work with flattened chicken breasts? I am trying to make 'naked chicken chalupas' at home.

The shellminator is somewhat flexible, so I would guess it would work on anything that was flattened and bendable. If you can make the chicken flattened to close to a corn tortilla, you'll be fine.

Has anyone tried using these to cook tortillas in the oven? Like brush or spray with oil, then put them in the shapers in the oven?

It works great in the oven , I have eight Shellminators. I just spray them with spam lightly then place the tortilla in the shellminator and fit as many as I can on a flat baking pan then put them in a preheated oven of 350* for 20 minuets. It’s healthier this way because you’re hardly using any oil and a lot easier.

Can I cook more than one tortilla at a time?
