What is the dimension for the butcher knife sheath?

I'm not sure which one is designed for a butcher knife. Our butcher knife is curved so none of these work exactly. The closest one if 2 inches wide by 8 1/2 inches long.

Could these protect knives stored in an outdoor kitchen?

Yes, but these covers are not waterproof (you have to have it in a covered storage). So if you are leaving your cutlery open to the weather, these covers are not going to protect it from the elements.
