Will a 3-way bulb work?

It will work but you’ll only get one level of light from the bulb, the lowest wattage part of the bulb.

My kit did not come with instructions, is there a link or video online to view?

Easy to rewire your lamp. I suspect youtube has some good videos o how to do this. One difficulty may be if your lamp is narrow.....it may be difficult to hold the nut inside to get the old unit off and to reinstall the new unit. Google "how to rewire lamp" and you should get several helpful videos.....good luck.
