I have used this a few times to smoke some fish, namely halibut and salmon filets. They came out good. I followed the recipe from Outdoor chef life on yt. Chips next to or on top of white charcoal. The chips add a subtle flavor to the fish and you taste mostly the fish and other added ingredients. It doesn't overwhelm the fish or remind you of other smoked meats. The chips are small and thin. Dry wood. looks and smells fresh. One bag is plenty and I just use a handful for one filet. Hard to find these at my local store in California.
