The worst factory edge I have ever seen.
I just received the knife today. I don’t like factory edges, so inspected the edge of the knife, before I would start reshaping it. I couldn’t believe my eyes, it looked like a child put the edge it. Very rough grid, looked like they use something that I don’t have, plus very uneven grid. I tested it, and it just tore paper. I tried a 1000 grit king stone first, to no success, then switched to a 220 grit Norton stone. Man I am tired lol very hard medal. But I finished shaping it, then went back to my king 1000 and sharpened it, then I used a king 6000 to polish it. It was a lot of work. But now it cuts like a razor. But I think people need to know, it has really good steal, but HENCKELS should be ashamed to send a knife with an edge so pitiful. If you are not a very good experienced sharpener, hire a knife sharpener to put an edge on it, that uses stones to sharpen knives, or buy another knife.

Great knife and the only one I use now! I love it!
I LOVE this knife! So sharp and such a quality knife. I've never had such a nice knife before and I have had a lot of expensive knives but this one is the very best! The grip is comfortable and easy to use. It's just the right weight and the length is perfect. Great seller, too. Well packaged and delivered quickly.

Sharp edge but too light.
This knife has a good, sharp edge. However, it is far too light for doing heavy duty cutting and carving.

Excellent knife for the price.
The spine of the knife, the back of the blade, is very sharp. Every Henckles knife I've purchased (5 so far) has had this 'feature'.I have to use a rough stone on the back of the knife to soften the edge enough so it doesn't cut my hands during use.That's the only downside, these knives are excellent purchases if you knowingly put a little effort into them. They come factory sharp, but a strop with some compound gives them incredible lasting sharpness.They are right between a soft blade that is easy to sharpen and a hard blade that is brittle. So if you work with knives for a living these are going to last you a long time. My 8" classic chef from henckels is my workhorse, this 8" classic carving I use with taking skin and scales of fish or taking silver skin of beef. It's not as flexible as some carving knives I've used, but I think that's better.

Great Knife
I needed a new knife and this was exactly what I need. Well balanced and very sharp. I have used many times and I am very happy with my purchase. I would recommend this to anyone that enjoys cooking.

I needed a replacement for my wife's 8" kitchen knife.
The new knife was an exact replacement fir her 40 year old knife. I bent the tip trying to cut the head off a chocolate Easter bunny. I tried to stab the neck to cause the head to separate. That put a 10 degree bend on the tip of the blade. The hardened steel was not willing to be straightened and broke off. Any cost was worth it to replace the broken knife and keep the wife happy. An exact replacement arrived a few days later. I now have a blunt ended 7" knife in my tool box and a happy wife. And, I don't have to sharpen the new knife right now.
