Hello, I am glad to reply to your question,1. According to the test, when you use the item clip knife cake, after cutting the cake from bottom to top, able to split a very high cake.2. About cutting the thickness of a single piece of cake.The slicer has 5 levels of height, each floor and bottom height of 0.25 ", 0.5", 0.75 ", 1" and 1.25 ", You can hold the cake knife as needed to obtain the desired thickness cake.Thank you.

Will this allow you to just trim the top of a cake to level it?

Depending on how tall your cake is. But yes for the most part it can cut just the top off. It works really well. I've tried a few different gadgets but this has been the best one.

sturdy enough for bread?

These are cheaply made. You will get maybe 3 uses out of it and it breaks. I dont know about slicing bread.

do you get a knife with it?

No. This doesn’t come with a knife
