I have used this once.. This is my first use of a proofing cloth.. So far so good. It seems to do the job yet I have nothing to compare it to.Revision, 1/4/2014I have used this a multitude of times now and have to say there is a big difference in the overall consistency and quality of my baguettes. The cloth does a great job at wicking out mostture which helps keep a good proof and tauntness to the dough. I originally did not know this was a desired effect of the cloth yet after some research N discover this was one of the functions of the cloth.The cloth holds flour well as well as maintains folds well to keep baguettes separated.

We did see those during our trip to France and decided to try it. Works great for rustic French baguettes. Keeps them moist and allows to rise fast and easy. Because cloth is linen, it is easy to care for it.

Great for baguette making. Good size for home use as I usually don't make more than 4 at a time but I think it can fit about 6 at one time. Make sure you do not wash it though as the instructions says.

Very happy with this couche - very high quality and a great size for my home kitchen. As long as you flour it as you are supposed to, nothing will come off and stick to your bread as some others have complained about. I've been making high hydration dough which is very sticky and have had no issues whatsoever - my baguettes roll right off and have no lint. Learn how to use it and you'll love it.

The package was delivered and left in front of my apartment house.Anybody could steel it as leave outside of the house, ground floor....Hope it won't ever happen again.Otherwise, product was fine.

Have lots of time so thought I'd figure out how to make real baguettes. While a towel could work, this thing, when seasoned, is the perfect thing to develop that hearty crust. Very nice.

I think this is hard to handle, compared to what I was expecting and what I've seen when I've watched others make baguettes. It seems really stiff and hard to maneuver around the loaves, no matter how much I try to stretch it and beat it around to get the fibers to loosen up and be more manageable. It works well, but it just seems it shouldn't be so difficult to get it where I want it and get the creases out, etc.

As expected. The real deal. I use couche like this at work. Good material. Durable construction. Of course, it needs the break in period. A little stiff, but stills works without a headache. No, "I don't want my food touching that" odor. I had a hard time finding this locally. Could not find it at retail cooking stores, restaurant supply, or anything else I could think of. Whether you are a serious bread baker or not, this is a must have. Especially for the Ciabatta lovers!!!
