Q: How many quart jars will the 10 quart zavor duo pressure cooker actually hold?

I just received this cooker today. No way 7 quarts will fit. The 10 quart cooker will hold 4 quart jars!

Q: Valve for pressure cooker Fagor broke....do you have a link to buy a new one?

If you go to the official Zavor website (Fagor is now Zavor), and scroll all the way down to the bottom, you will find a link to click onto in order buy parts. I myself have bought a few spare pressure valves from them for my Zavor Duo. I haven't ever needed to use them, but thought it would be good to have a spare on hand just in case.

Q: Can you use it just to steam - say vegetables or dumplings. i want to be able to steam or pressure cook. tia

Yes, it will come with a steamer basket, and if you do not set it for a pressure it will just create a steam chamber. Keep in mind though that a microwave is also steaming, just from the inside, sort of. Place veg/dumpling in a microwavable bowl cover tightly with plastic wrap and you'll steam the contents.

Q: How to measure the pressure when using for canning?

There is no way to check, but this does have to pressure settings. The spring valve mechanism that our units have work differently than a traditional dial or weighted valve that most pressure canners have. The pressure is not adjustable, but it is entirely self-regulated to reach and maintain either the 15 (high) or 8 (low) PSI until the user releases it.
