Q: Whats the difference between the red handle and blue handles?

First, the blades are the same between the P3 Series (blue handle) and TR Series (red handle). The P3 handles are constructed of commercial grade impact and temperature resistant polymers that are injection molded onto the blade and tang of the knife. The handle is very slightly textured, and is what is considered a hard handle. The handle design is slightly different, with the main difference being the from of the handle is made a little more narrow so that it slides more easily into the flat scabbards that are popular in meat processing plants. The TR series uses a dual injection molded on process for the handle. The first layer is a dense, strong polymer that is the same used on the P3. A second outer layer is then injection molded onto the first layer under high pressure to create a very strong and seamless bond between the two layers. The second layer is made of Santoprene polymers that almost has the feel of rubber. This provides added grip. It is recommended with the TR line to wash and scrub the handle before use, to remove any polymer film that remains after production.

"The Jero Pro line was designed to be a durable, but economical line for use in the food service and meat processing industries. Unlike other economical lines sold by retailers, our Jero knives use the same quality materials used in higher priced knives. Our Jero Pro line is made in Portugal, using high-carbon stainless steel and dense polymers for the handle. Set includes 7" Narrow Blade Butcher and Trim Knife, 6" Skinner, and 5" Curved Stiff Boning." Blades lengths are 7", 6" and 5".

Both the P3 and the TR are easily cleaned and can be sanitized equally. The P3 would be slightly more antimicrobial since the water absorption rate of the polymer is less than the softer polymer. Less water absorption means it reduces the ideal environment for bacteria growth, plus it has less absorption of other materials such as fats and oils. This absorption is very minimum and at the microscopic level, but if we were to determine the handle with the highest level of antimicrobial protection it would have to be the harder P3 handles. Again, both can be heat or chemically sanitized. If working around fats, wash with cold water first and scrub then apply the hot water and cleaner for the final wash.

Excellent knives

We used this set to butcher 1 elk, 2 deer, and 1 antelope. They arrived sharp but were easy to sharpen when it came time. The handles are durable and comfortable and we are extremely pleased with the purchase.
