Suitable for an edge-grain/flat-grain/quartersawn kitchen countertop with undermount sink? can it be waterproofed somehow?

I mill my trees and created a walnut coffee table whereupon I used Osmo to seal the wood.  So far it has worked.  My wife even brings her soup/cocoa to set upon the table as she watches the tube.  However, I am not certain Osmo would be good to use on a kitchen countertop.  Better to use Stone Coat Epoxy or some of the bar top epoxies available at Lowes or Home Depot.  And in order to achieve a satin finish after using a "glassy" bar top epoxy, you simple sand the top with 320 - 600 grit sandpaper in an orbital sander to achieve the satin finish.

Question 2

I just did 2 coats on my unfinished tabletop and bookshelves, is it pointless for applying a 3rd coat? or 2 coats are already enough. Thank you.

If you're using the Extra Thin Osmo (as pictured in the photo), then, I suggest using a 3rd coat, at least.  That would provide better protection for the surfaces.  Now, if you're using a thicker Osmo, 2 coats MIGHT do the trick.  
I make lazy susans and here's my scheme:
• start with 1 coat of Extra Thin Osmo Oil
• apply a 2nd coat, but this time use regular viscosity Osmo.  I always have 2 coats (at least) on the bottom of products
• for the top surface, I start with Extra Thin for first coat, then apply at least 2 more coats of regular viscosity Osmo Oil.
I apply each coat by rubbing vigorously with a rather non-abrasive Scotch-Brite type pad (high grit).  Then, I wait 6-8 minutes to let Osmo sink in and/or dry a bit.  When I rub it off, I use pieces of cut-up t-shirt that are cut into squares, always trying to wipe with a clean surface (it just comes off better if the spot is clean).  After I have the surface wiped off until no more comes off onto the rag, I then set that piece aside to dry overnight.  And, yes, I do this for each coat, regardless of viscosity.
After I have 3 coats (minimum) on the top surface, I evaluate after the surface has dried completely.  If I feel like it needs another coat, I apply that.  Otherwise, I just go with it.
And, on SOME items, I will apply a coat of paste wax (I used Johnson's wax), let that dry, then buff it off with a motorized hand buffer (sheepskin pad) or else just a good buffing with clean cloth.  That seems to help make the top surface really nice and smooth.

I hope this helps.  I've used this process on about 50 lazy susans so far and plan to continue doing so.

Do you need an oil before the wax or does the wax stain the wood?  Which oil did you use for pictures?
