Yes it would stable. The goose neck is very stiff and doesn't bend easily at all. A suggestion: If you are mounting it on a round metal tube you should wrap the location were the clamp is going to go with a couple turns of electric tape. This will keep it from turning downwards.

Q: Has anyone used this for a s7 edge ? And cliped it to their headboard ?

I haven't got an s7 edge, but I've been using a Sony Xperia Z5 Premium with quite a chunky phone case, and it grips the phone quite nicely. Just avoid getting the volume buttons squashed! The clamp on the other end is quite strong if you have the holder looped as shown in the selling images, holds the phone steady as long as the thing you're clamping it to is no thicker than maybe just over an inch. And it HAS TO BE A FLAT SURFACE. If you have the holder at full stretch, it can cause a lot of leverage and so if your phone is quite heavy, the holder may struggle to keep upright if you want it at some crazy stretched angles. But most cases I found, it should be fine if you add a couple of bends to the arm.
