Q: What are the best budget stones to keep this knife sharp

I don't know what stones to use, because I use a high-end Chef's Choice electric knife sharpener that is set to Asian bevel angles (15 deg) and allows for single side sharpening that is required for this knife. Sharpness is about as good as stones. https://www.amazon.com/gp/product/B0018RSEMU/

The M24010 has a wood handle. The M24010PL has a slip-resistant Santoprene handle.

Q: Which side of the knife do I sharpen?

Its a single bevel. Do not use common knife sharpeners where you pull a blade through opposing carbide disks, or any motorized sharpeners. It needs to be sharpened by hand on a set of stones. You first work the bevel side, then do a few passes on the flat side to remove the burr and complete the edge.

I have found it to be quite good for this purpose. I also own two much more expensive, hand forged knives that have more romantic/ sanctimonious value. They are good ( they had to be handmade because I am left handed). Those ones I value for their artistic, rather than practical value. If you can get aside the the rare handmade in Japan thing, this knife is the only one I actually use and works great. The other ones are very prone to pitting, oxidation, and so forth. Unless you are a sushi master in Japan ( which by asking this a question you are not) the Mercer is not only acceptable, but preferred.
