Q: I need 30 x 21" strips for museum displays. can i run them in parallel (for aesthetics) with 14 or 16ga wire from a single 350w psu? total length 25'.

It depends on power requirement of LEDs. In my experience, 15' of LEDs uses about 2 amps on a 5v USB. As long as your power source can handle the amps. I use a PC power supply, use yellow wires for 12v black for ground on 12v LEDs and power supply will usually state amps on unit somewhere, about 20+. All you should need is 5 amps.

Q: If my led strip is dimmable, will I still be able to dim the lights using this connector?

If your LED strip is a 2 wire single color type then dimming is done at the power supply by lowering the applied voltage and current and this 2 wire connector will not interfere with that. 3 color or cool/warm white LED strips will use3 or 4 wires. This connector will not fit all types of 2 wire strips, check first.

Q: Is there a maximum length for a bridge between led sections?

As long as the wire used is large enough to have low resistance bridges can be quite long, longer for higher voltage strips ( 24v). Bridges of 10 feet or more should be possible without excessive diming of the downstream strip.
