Q: How does this baking mat differ from the other Silpat baking mats?

Lot of good, correct answers provided by others. Another item that I have personally found; my silpain mats make better cookies as they don't spread out thin like on my silpat mats. Also, cookies baked on silpat, although thin, don't seem to cook in the center as well as on this silpain. Pain is french for bread so it makes since that it's the bread mat.

No, for Macaron or meringue, the regular Silpat or the Silpat Macaron is recommended, it won't work on the Silpain (black) SN415290-02

Q: Can the Silpat Silpain mat be used to bake macarons?

Yes, you can use a Silpat, however you may want to get the one that has the guides already on it, so that your cookie size is as similar as possible. Unless you are experienced at layout them out without the guide marks. Then it doesn't matter about the guides. The one in the image is mainly for breads, and can be used for Macarons. However, there are other Silpats that are used for Macarons as well. Not sure if there is a price difference.
