Q: Will it run my freezer?

I have run fairly decent-sized refrigerators with my inverter, no problem. I’m sorry I can’t speak to freezers, I’ve never had one myself. I believe that the average refrigerator is less than 1000 watts and that is... between 8 and 9 Amps — roughly — at 120 Volts AC. You can run this as long as you can keep it — whatever is feeding your inverter — going. I ran my fridge, a small TV, Internet service, a laptop, and little else during a long outage in 2005 during and after a hurricane here in Texas, north of Houston. I had a decent battery bank, but I still had to charge to keep going. I used my pickup to charge, it has an upgraded alternator that seems to do it rather well.

You will have to check how many amps the a/c uses then multiply by 110 to get watts. If it is less than the inverter output, it will work.

Q: What is the best battery configuration? to use with the system

It all depends on your application(s). I mainly use my inverter from my truck, to run tools and things when there is no power around. More than once, my pickup has become a sort of last ditch generator during power outages caused by hurricanes and other adverse conditions — running the few essentials in life... I’ve had really good luck with a stack of 6 Sealed Lead Acid batteries — each one is about 1/3 the size of your average car battery, and they fit nicely under my back seat. I have a fairly large alternator installed, so I watch the batteries closely and run my truck when I need to recharge. The Sealed Lead Acid batteries I use are 12v 20AH size, FWIW. Right now running on 4, but I’ll put the other 2 back in ASAP.
