Q: My folders came completely covered in mold, how to safely clean them?

That sounds like something I would send back for a replacement. You could clean them with hot water and dish soap but the bone folders are porous, so there might still be mold hiding in some of the tiny crevices. I'm not sure how a bleach solution would affect them, but it sure would kill mold. They shouldn't have come like that, I'm sure Amazon would be happy to replace those.

Q: Does the creaser one do something different than the bone one? Are they used best for different purposes?

Each folder serves a different purpose. The straight one creases efficiently. The curved tool is for flat or curved surfaces to burnish the surface and ensure gluing throughout the glued surface.

Q: What is the blade thickness on these scorers? Is is thin enough to fit into the groove of a paper scoring board and do a good job?

These are not paper scorers, they are for pressing folds to a sharp crease. They are about 1/8th inch thick and are not sharpened on the edges.
