Q: Can these be used for covering gauze while going to the beach for a few hours?

I say absolutely! I use mine to cover my insulin pump and it stays completely dry and solidly in place. Even after showers an such.

Q: Cani put this over honey ointment for burns

As long as it is a very thin layer of ointment and doesn't go to the edges of the film.

Q: will this prevent contamination of infusion site for TPN? I am afraid of infection but would enjoy occasional bath or shower.

Yes if you crimp it securely around the tubing and as close to the skin entry site as possible and get all the wrinkles out close to the edge to prevent water from seeping in. It is very adherent.

Q: How can they be waterproof and breathable?

These are waterproof but not breathable.
