Q: how many servings per bottle?

I have only used it to flavor noodle based dishes and soups when they are nearly done. It only takes about about 2 tablespoons for a large serving for one so on bottle lasts a long time. I don't know exactly but at least a dozen servings for me per bottle, maybe as many as 16. But it depends on taste. It is well worth it. Even a little like one tablespoon per serving might be enough especially if you have other seasonings like soy sauce with it. I am not much of a cook so you will probably get better answers.

Q: I don’t understand the ratio to water chart. For Udon Soup is it 6 tablespoons to each 1 cup of water?

There are a few variations of the product. I am not familiar with the one picture of which was shown. Here is what I know: They talk about "parts". If it says "one to six" it means "one part this product to six part water." So, if you have to use tablespoon unit, the you should read one table spoon Hontsuyu to 6 table spoon water. It makes you pour a lot more of Hontsuyu than you expect? In the end, however, you are the cook. They are only indicating a starting point. You will find fairly wide latitudes. You should also feel feel free to try a mix of Hontsuyu and straight shoyu. I use the mix because Hontsuyu is slightly too sweet to my taste..

Q: can you freeze this product after opening

I have got it close, but not quite "frozen solid." Sorry, I did not take temperatures. A half-full bottle was left in the freezer compartment for two days. I did not sense any change in flavor. If you have a friend in the Japanese antarctic expedition team, she/he might have an interesting story to tell you. (There is a cook among them.)
