Q: What is the difference between the long and short versions of this product?

Long Viili has a thick ropy consistency that when stirred it quite silky whereas Short Viili has the loose jelly consistency you would normally find in a mesophilic yogurt.

Please read instructions for activating the culture. Which will be small amounts at first. Once the culture is thriving you can make large amounts. I make two pint jars of it two times a week. I could make much more— gallons if I wanted but would not consume all that

Q: can this product be at room tempeture for long period before using?

In it's dried form it should be shelf-stable for quite a while. Once you hydrate it, though, it should be kept in the fridge. It will be okay while fermenting, which takes 24 to 48 hours. When it becomes semi-solid, place it in the fridge. When you run low, reserve a couple of tablespoons of the product to mix into a fresh batch of milk. Be sure to sanitize the jar and lid. I use quart mason jars with screw-on lids. Screw the lid on the jar loosely so air can escape while the product is fermenting.
