**Q: Which is correct? The top color and the bottom color are different pH readings, so which is correct?**
A: Yes, this is very frustrating.   If I go by the top one, and it's, say, "3.0", then the bottom one will usually be "4.5"  ----- Which is correct, indeed?

**Q: Can these strips be used for food items to be canned?**
A: I believe that it can be used for that.  I personally use them to test the acidity of lacto fermented vegetables (mostly hot sauce) so I know when the PH is low enough to be shelf stable.

**Q: What is the purpose of the second raw of colors?**
A: What is the purpose of the second row of colors? Accuracy. Each strip has two pieces of litmus. One reads 'top down' and the other 'bottom up.' They both react and the best answer is in the middle. Compare the color of the two strips on each stick to the color chart, and you'll have your answer. Don't overthink this. Just dunk the strip into the liquid in question, then compare to the color chart for your reading. Easy as that.

**Q: Is using your nose to tell when something is off not a thing any more? What did they do for thousands of years?**
A: Got sick and enjoyed poor products. If they had access to our knowledge and equipment, they would have used it too.

I really like this product. You pull out what you want and test your kombucha. Better than the strips I got with the original kombucha kit. And they are in a nice container rather than the little paper envelope that came in the kit.
