But that's when I came across this Blue Diamond pan. I needed a 5 quart saute replacement and the prices they were charging for those chef hyped-up hex-clad thingies had my retirement plan sweating. I read where you even had to be careful with chemicals used in the manufacturing of these ceramic pans and that Blue Diamond takes care to not use any of them. So...Under $40 sounded like it would be worth a try. Long story, even longer...I'm more than a dozen cooks in now, many with prolonged 400 degree oven add ons, and besides a slight little discoloration on the bottom due to my gas stove, I can't tell it's not brand new. Jeez! It takes whatever I throw at it and just wipes out perfectly clean. I've thrown it in the dishwasher and voila! Perfectly new coming out. And fast? This pan heats up in no time. Everything I cook is faster now, and evenly cooked as well. Bottom line...Save your money. Don't buy into the hype and spend hundreds because a chef uses a certain cookware in their kitchen. These pans will save you money and save you time. I'm going to replace my smaller pans now with these. I am sold. It's ceramic for me for now on.
