Review: A beginners cheat to professional sharpness - So.... I am a novice cook who has begun getting into cooking and knives. I did the whole learning to sharpen manually but not being perfectly happy with the results. Trying different stones, stone holders etc. Honestly, I have enjoyed the journey, but this thing has made a lot of it pointless. It's almost like cheating? It feels like it. I haven't ever gotten a knife as sharp as this before. I have sadly ran out of knives to sharpen. It's great and I love it, makes sharpening a breeze. It is not perfect but it's pretty good. First, the three stones included, not great quality, the diamond plate bit is just glued to a aluminium blank thing, I can't see them last long and the glue is allowing one of the plates to move. The selection of grits isn't ideal either. I think the first thing any of you will purchase after this will be more stones. Fortunately this device doesn't use some silly proprietary system so they're easily sourced and not overly expensive. Just bear it in mind as a future purchase. Secondly, the instructions are lacking but you'll work it out and I'm sure there's unofficial guides. Third, I REALLY REALLY recommend having somewhere to bolt it down, it will move otherwise. You may get away with a heavy weight or something on the base but still. It is also a tad scary having the knife blade aimed directly at you, fears of tripping or something aren't fun. I am sure some parts can be upgraded or will need to be replaced due to wear but looks like an easy to do thing. Also, you'll need a way to measure the angles yourself. It is good, it is cheaper than competing devices, does the job very well. It will feel like you don't get a lot for the money but I'm sure the equipment to manufacture a precision device like this takes a chunk. I like it, I recommend it.

After hours of video viewing this apparatus came out tops in my pursuit of decently sharp kitchen knives. I thought I should give it a go and if it's no good...send it back. It is NOT going back. The quality of the engineering and finish is excellent. Assembly and setup is simple if you have looked at the videos available on line. It comes with three decent enough stones to get you started but as my knives were so bad I opted to purchase another set with coarser stones. To get the best out of it you will need an angle finder available on desertcart for a few £'s. Once assembled and ready to 'sharpen' I did notice that the base, while pretty good, did tend to allow the apparatus to wobble a bit so mine is now screwed down to an old chopping board. I've also drilled an appropriate size hole to hold the Allen key used to adjust the fixings on the apparatus. Also it neatly holds the 'all' the sharpening stones and the leather strop I bought to go with it so all the 'sharpening' kit is now nicely located in one place. Would I recommend this? 100% Yes. If you are concerned about blunt knives or just want to be able to sharpen your own knives with a 'smoooth' cut instead of the rough, raspy edge you get from one of those 'draw through' sharpeners then I can thoroughly recommend this.....Get the accessory 'Single blade' 'Y' shaped attachment and you will be able to sharpen anything from a pocket knife to a kitchen Chefs knife......and get them razor sharp enough to slice paper with ease.

### ⭐⭐⭐⭐ Great Value

This high end sharpening system gives great results compared to others I have used before. It comes in a fairly basic package, and requires some assembly, but not much, and it was ready to go in only a few minutes. Setup is simple, with the knife clamps being adjusted to fit the length of the blade and fixed in place, then tightened to the blade using the included Allan key. This provides a firm grip and does not mark the blade. Then the sharpening angle must be adjusted. This requires you provide your own angle measurement tool, which I find very odd as there are markings on the side, only without numbers. It's something of a mystery as to why there are no angle markings. It is possible to move the pivot higher than the base position, which would throw off the angle, but then, it's not explained in the instructions why you would want to do that in the first place. Once the blade is fixed, and the angle established, it's very easy to attach one of the included diamond plates using the sprung clamps. I really liked this mechanism, as it's very quick to change, and secure once in place. The three plates included are good quality and flat, and a good selection for resetting angle through to a fine finish. I would have liked to have seen a 3000 grit included, but these are available aftermarket. The results are excellent as the kit has very little slop overall. It's very easy to get good results if you have an idea of what you're trying to accomplish, and I doubt I will go back to using stones for all but a few of my knives. The flip over feature is incredibly useful compared to some other fixed angle systems I have used in the past, so getting an even grind is super fast. My only major complaint is that it's really easy to overtravel using this kit, because you are holding a knob that's some way away from the stone. This adds a good degree of safety, but unfortunately I managed to mark many of my knives with small slips. The diamond stones cut so well, but it's a double edged sword as they also mark blade edges quite deeply and quickly if you make contact. While this is user error, I was able to prevent it using a couple of shaft collars to set and limit the travel of the sliding rod so it was impossible for the stone to slip off the cutting edge of the blade being sharpened. I don't baby my cutlery, but many of my knives were not cheap, and for the manufacturer to miss such an easy fix is annoying. I would recommend that anyone buying this also obtains some 6mm screw down collars to fix this issue. Overall, I would recommend this kit. It's great value, and delivers excellent results, but could certainly be improved.
